Ingredients
  

  • 2 lbs yellow potatoes cut into large chunks (about 2-inches)
  • 0.5 medium yellow onion cut into chunks
  • 5 cloves garlic minced
  • 2.5 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp dried rosemary crushed
  • Salt and freshly ground black pepper
  • 3 lbs bone-in, skin-on chicken thighs trimmed of excess skin
  • 1.5 Tbsp olive oil
  • 0.5 cup chicken broth
  • 3.5 Tbsp fresh lemon juice
  • 2 tsp lemon zest divided
  • 3 Tbsp fresh parsley

Method
 

Layer the Base
  1. Place the potatoes and onions in an even layer in a 6-quart slow cooker. Pour in the chicken broth. Sprinkle with half the garlic, oregano, basil, and rosemary. Season with salt and pepper.
Sear the Chicken
  1. Heat olive oil in a large heavy-bottomed pot over medium-high heat. Dab the skin side of the chicken thighs dry with paper towels, season with salt and pepper, and sear, skin side down, until golden brown, about 4 minutes. Transfer to the slow cooker and repeat with remaining thighs.
Infuse the Flavors
  1. Pour lemon juice over the chicken thighs. Sprinkle the remaining garlic, oregano, basil, and rosemary over the chicken. Add 1 tsp lemon zest (reserve remaining zest for serving).
Cook Low and Slow
  1. Cover the slow cooker and cook on low heat for 5 1/2 to 7 hours, or until the chicken is tender and fully cooked.
Finishing Touches
  1. Before serving, sprinkle fresh parsley and reserved lemon zest over the top. Spoon slow cooker juices over servings and enjoy.
