Layer the Base
- Place the potatoes and onions in an even layer in a 6-quart slow cooker. Pour in the chicken broth. Sprinkle with half the garlic, oregano, basil, and rosemary. Season with salt and pepper.
Sear the Chicken
- Heat olive oil in a large heavy-bottomed pot over medium-high heat. Dab the skin side of the chicken thighs dry with paper towels, season with salt and pepper, and sear, skin side down, until golden brown, about 4 minutes. Transfer to the slow cooker and repeat with remaining thighs.
Infuse the Flavors
- Pour lemon juice over the chicken thighs. Sprinkle the remaining garlic, oregano, basil, and rosemary over the chicken. Add 1 tsp lemon zest (reserve remaining zest for serving).
Cook Low and Slow
- Cover the slow cooker and cook on low heat for 5 1/2 to 7 hours, or until the chicken is tender and fully cooked.
Finishing Touches
- Before serving, sprinkle fresh parsley and reserved lemon zest over the top. Spoon slow cooker juices over servings and enjoy.
