Ingredients
  

  • 4 medium-large boneless skinless chicken breasts (OR 4-6 boneless skinless chicken thighs)
  • Salt and pepper to taste
  • 3 teaspoons Italian seasoning
  • 2 tablespoons lemon juice (Juice of 1 medium lemon)
  • 1 tablespoon minced garlic
  • 1 medium onion (chopped)
  • 1 cup kalamata olives
  • 1 cup roasted red peppers (roughly chopped)
  • 2 tablespoons capers
  • Fresh thyme, oregano, or basil (Optional, for garnish)

Method
 

  1. Season the chicken with salt and pepper to taste. Heat a large skillet over medium-high heat and sear the chicken for 1-2 minutes on each side until golden brown. Transfer the seared chicken into a greased slow cooker.
  2. Arrange the chopped onions, kalamata olives, roasted red peppers, and capers around the chicken in the slow cooker, ensuring these toppings stay on the sides and don't completely cover the chicken.
  3. In a small bowl, whisk together the Italian seasoning, fresh lemon juice, and minced garlic. Pour this mixture evenly over the chicken.
  4. Cover the slow cooker and set it to cook on low for 4 hours or on high for 2 hours, or until the chicken is fully cooked and tender.
  5. Once cooked, garnish with fresh thyme, oregano, or basil if desired. Serve the chicken hot, paired with your favorite Mediterranean sides.
