Cook the Quinoa
- In a medium saucepan, bring 2 cups of water to a rolling boil. Add 1 cup of uncooked quinoa and stir. Reduce the heat to low, cover, and simmer for 15-20 minutes, or until all the water has evaporated and the quinoa is tender and fluffy. Let it stand, covered, for a few minutes before fluffing with a fork.
Roast the Vegetables
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.
- Prepare the vegetables: Peel and cut the sweet potato into ½-inch chunks. Julienne the red onion (slice thinly into strips). Halve the cherry tomatoes.
- Add the sweet potato, red onion, and cherry tomatoes to the prepared baking sheet. Drizzle with 1 tablespoon of olive oil, season generously with salt and pepper, and toss to coat evenly. Ensure vegetables are in a single layer for optimal roasting.
- Roast for 15-20 minutes, or until the sweet potato is tender enough to be easily pierced with a fork and the vegetables are slightly caramelized.
Prepare the Lemon Tahini Dressing
- While the vegetables are roasting, prepare the dressing. In a small bowl, combine 1/4 cup tahini, 2 tablespoons lemon juice, 1 tablespoon honey (or vegan alternative), 1 teaspoon minced garlic, and a pinch of salt and pepper. Whisk vigorously until smooth. If the dressing is too thick, gradually whisk in 2-3 tablespoons of water, one tablespoon at a time, until you reach your desired creamy consistency.
- Pour your desired amount of dressing onto the 4 cups of kale. Massage the dressing into the kale leaves with your hands for a minute or two until they are softened and well-coated. This step makes raw kale much more palatable and tender.
Assemble Your Bowls
- Divide the dressed kale and cooked quinoa between your serving bowls.
- Top with the roasted sweet potato, red onion, and cherry tomatoes.
- Add the sliced 1/2 avocado to each bowl.
- Garnish with fresh dill and chives, if using. Drizzle with any extra tahini dressing.
- Enjoy immediately while warm, or chill for later.
Notes
Store cooked quinoa, roasted vegetables, and the tahini dressing separately in airtight containers in the refrigerator for up to 3-4 days. Assemble just before serving to maintain texture. Add avocado right before eating to prevent browning.
