Step-by-Step Method
- Preheat oven to 425°F. Line a 14x20 sheet pan with parchment paper. In a mixing bowl, toss potatoes and onion with 2 tablespoons olive oil, half of the garlic, half of the oregano, half of the smoked paprika, salt, and pepper. Spread evenly on the pan and roast for 15 minutes.
- In the same bowl, toss chicken with remaining olive oil, garlic, oregano, smoked paprika, lemon zest, juice, salt, and pepper.
- Remove the sheet pan from the oven. Nestle chicken between the potatoes. Add green beans around the chicken and drizzle lightly with olive oil. Scatter olives over the top.
- Return pan to the oven and roast for 20–25 minutes, until chicken reaches 165°F internal temperature and potatoes are golden.
- Sprinkle crumbled feta cheese over everything. Roast for 2–3 more minutes until cheese warms through. Garnish with parsley and lemon wedges. Serve directly from the pan.
