Step 1: Preheat Oven
- Preheat your oven to 425°F to get it nice and hot for optimal roasting.

- Chop all your vegetables to a uniform size for even cooking. Once prepped, place them in a large mixing bowl.

- In a small mixing bowl or mason jar, whisk together the olive oil, minced garlic, thyme, oregano, za’atar (or sumac), lemon juice, salt, and black pepper. Mix thoroughly to create a flavorful seasoning blend.
Step 4: Toss It All Together
- Pour the olive oil mixture over the vegetables and toss until everything is evenly coated.
Step 5: Spread on a Baking Sheet
- Arrange the vegetables in a single layer on a large baking sheet. Avoid overcrowding to ensure proper roasting. If necessary, use a second baking sheet.
Step 6: Start Roasting
- Bake the vegetables for 30-35 minutes, making sure to stir them halfway through the cooking time. Roast until the veggies are tender and the edges are slightly charred.
Step 7: Garnish & Serve
- Before serving, sprinkle fresh parsley, mint, dill, or basil on top for a burst of color and flavor. Serve warm with lemon slices on the side.
