Ingredients
  

  • 1 zucchini sliced and quartered
  • 3 carrots peeled and cut into chunks
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 red onion chopped or sliced
  • 1 yellow squash sliced and quartered
  • 2 cups cherry tomatoes
  • 3 Tablespoons olive oil
  • 4 cloves garlic minced
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • 1 teaspoon za'atar or sumac (optional)
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/2 lemon juiced (optional)
  • parsley, mint, basil or dill chopped
  • lemon slices for serving

Method
 

Step 1: Preheat Oven
  1. Preheat your oven to 425°F to get it nice and hot for optimal roasting.
Step 2: Prep the Vegetables
  1. Chop all your vegetables to a uniform size for even cooking. Once prepped, place them in a large mixing bowl.
Step 3: Make the Seasoning
  1. In a small mixing bowl or mason jar, whisk together the olive oil, minced garlic, thyme, oregano, za’atar (or sumac), lemon juice, salt, and black pepper. Mix thoroughly to create a flavorful seasoning blend.
Step 4: Toss It All Together
  1. Pour the olive oil mixture over the vegetables and toss until everything is evenly coated.
Step 5: Spread on a Baking Sheet
  1. Arrange the vegetables in a single layer on a large baking sheet. Avoid overcrowding to ensure proper roasting. If necessary, use a second baking sheet.
Step 6: Start Roasting
  1. Bake the vegetables for 30-35 minutes, making sure to stir them halfway through the cooking time. Roast until the veggies are tender and the edges are slightly charred.
Step 7: Garnish & Serve
  1. Before serving, sprinkle fresh parsley, mint, dill, or basil on top for a burst of color and flavor. Serve warm with lemon slices on the side.
