Ingredients
  

For the Salmon
  • 1 pound skinless salmon fillet cut into 1-inch cubes
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon Aleppo pepper or red pepper flakes
  • 1 lemon zested and juiced
  • Extra virgin olive oil drizzle
  • Kosher salt large pinch
For the Rice
  • 2-3 cups cooked basmati rice
  • 3-4 tablespoons Greek yogurt
  • 1 tablespoon Ghee melted
For the Vegetables
  • 3 baby bell peppers cut into rings
  • 3 green onions chopped
For the Garnish
  • 1 cup fresh cilantro or parsley chopped
  • 1/4 cup sun-dried tomatoes chopped
  • Feta cheese crumbled, optional

Method
 

Season the Salmon
  1. In a medium mixing bowl, toss the salmon cubes with oregano, garlic powder, Aleppo pepper, lemon zest, olive oil, and salt. Set aside.
Season the Rice
  1. Combine cooked rice, yogurt, and ghee in a bowl. Mix until coated.
Crisp the Rice
  1. Heat olive oil in a pan over medium-high. Spread rice, cook undisturbed for 3 minutes. Toss gently and repeat until golden brown (10-15 minutes).
Cook the Vegetables
  1. Heat olive oil in a pan over high. Sauté bell peppers and green onions with salt until charred, 3-5 minutes.
Cook the Salmon
  1. In a pan, cook salmon cubes over medium-high heat until crispy and flaky, about 4-7 minutes.
Assemble the Bowls
  1. Divide crispy rice and salmon into bowls. Top with vegetables, fresh herbs, sun-dried tomatoes, and feta. Add optional dressing to serve.
