Ingredients
  

  • 2 medium sweet potatoes
  • 1 teaspoon olive oil
  • 1 1/4 teaspoons ground cumin, divided
  • 1/4 + 1/8 teaspoons salt
  • 1/4 + 1/8 teaspoons ground pepper
  • 3/4 pound lean ground turkey (93%)
  • 4 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1 1/4 cups canned crushed tomatoes
  • 1/4 cup grated pepper Jack cheese
  • 2 tablespoons minced flat-leaf parsley

Method
 

Step 1: Microwave the Sweet Potatoes
  1. Pierce the sweet potatoes with a fork. Cook them in the microwave on HIGH for 4 to 5 minutes per side, or until tender when poked with a fork. Allow the sweet potatoes to rest until cool enough to handle.
Step 2: Prep the Sweet Potato Skins
  1. Cut the sweet potatoes in half lengthwise. Scoop out the flesh and place it in a medium-sized bowl, reserving the skins. Mash the flesh with a fork until mostly smooth, then mix in olive oil, ½ teaspoon ground cumin, ¼ teaspoon salt, and ¼ teaspoon pepper. Fill the empty potato skins evenly with the mashed mixture and place them on a baking sheet.
Step 3: Cook the Turkey Filling
  1. Heat a large nonstick skillet over medium-high heat and coat lightly with cooking spray. Add the ground turkey and cook, breaking it up with a wooden spoon, until fully cooked. Stir in the garlic, chili powder, ¾ teaspoon cumin, oregano, paprika, and the remaining salt and pepper. Cook for 1 minute, then add the crushed tomatoes and simmer until the mixture is thickened and flavorful.
Step 4: Assemble and Broil
  1. Spoon the turkey filling into the sweet potato skins. Top each with grated pepper Jack cheese. Preheat the broiler and broil the stuffed sweet potatoes for about 30 seconds, or until the cheese is melted.
Step 5: Garnish and Serve
  1. Sprinkle with fresh parsley and serve warm. Enjoy the bold flavors and wholesome goodness!
