  • ½ cup unsweetened vanilla almond milk or any milk
  • ¼ cup pumpkin puree
  • 1-2 tablespoons pure maple syrup
  • ½ teaspoon vanilla extract
  • ½ cup rolled oats gluten free if desired
  • 2 teaspoons chia seeds
  • ½ teaspoon pumpkin pie spice

Method
 

Step 1: Combine the wet ingredients
  1. In a medium bowl, mix together the Greek yogurt, almond milk, pumpkin puree, vanilla extract, and 1 tablespoon of maple syrup until well combined.
Step 2: Add dry ingredients
  1. Stir in the rolled oats, chia seeds, and pumpkin pie spice. Taste the mixture and add more maple syrup if a sweeter flavor is preferred.
Step 3: Refrigerate and enjoy
  1. Transfer the mixture into a glass jar or airtight container. Cover and refrigerate for at least 4 hours or overnight to allow the oats to soften and flavors to meld. Enjoy directly from the jar or transfer to your favorite bowl.
