Ingredients
  

  • 1 pound ground Italian sausage (hot or mild)
  • 1 small yellow onion (diced)
  • 3 cloves garlic (minced)
  • 3 Tablespoons flour
  • 1 teaspoon dried basil
  • 0.5 teaspoon oregano
  • 1 pinch cayenne (optional)
  • 1 teaspoon hot sauce
  • 0.5 teaspoon mustard powder
  • 0.25 teaspoon pepper
  • 1 pinch red pepper flakes
  • 1 cup heavy cream
  • 5 cups chicken broth
  • 2 cups kale (chopped)
  • 2 cups tortellini (just under 10 oz., refrigerated or frozen)
  • Salt (to taste)

Method
 

Step 1: Cook the Sausage and Onion
  1. Remove casings from the sausage if using links. In a large pot over medium-high heat, cook and crumble the sausage with diced onion until browned and softened, about 8–10 minutes. Drain excess grease. Add minced garlic and cook for 1 more minute until fragrant.
Step 2: Build the Base
  1. Sprinkle flour into the pot. Stir and cook for 1–2 minutes to remove raw taste. Add basil, oregano, cayenne (optional), hot sauce, mustard powder, pepper, and red pepper flakes. Mix until combined.
Step 3: Add Broth and Cream
  1. Pour in chicken broth and scrape the pot bottom to loosen bits. Slowly stir in heavy cream. Bring soup to a gentle boil, then reduce heat and simmer.
Step 4: Cook the Kale and Tortellini
  1. Add chopped kale and tortellini to simmering soup. Cook for 3–5 minutes until tortellini is tender. If tortellini requires longer, add it first and stir kale in during the last few minutes.
Step 5: Season and Serve
  1. Adjust salt to taste, starting with ¼ teaspoon. Serve soup hot and enjoy!
