Ingredients

  • 1 head red cabbage, sliced thickly
  • 1/2 red onion, sliced thinly
  • 2 TBSP olive oil
  • 1/2 cup red wine vinegar
  • 1/4 cup brown sugar
  • 3 TBSP crushed walnuts
  • salt and pepper to taste

Equipment

  • large stockpot
  • Sharp knife or mandoline
  • wooden spoon

Method

Step 1: Heat Oil
  1. Add the olive oil to a large stockpot and heat over medium heat. Add the red onion and sauté until softened, releasing a mild, fragrant aroma.
Step 2: Cook Cabbage
  1. Add the sliced cabbage to the pot, stirring to coat it evenly with the oil and softened onion. Add a little extra olive oil if the mixture looks dry. Sauté over low heat for about 10 minutes, stirring occasionally.
Step 3: Add Vinegar & Sugar
  1. Pour the red wine vinegar and sprinkle the brown sugar over the cabbage. Stir thoroughly to ensure the ingredients are evenly distributed. Cook for an additional 15 minutes, stirring occasionally, until the cabbage becomes tender but retains a slight crunch.
Step 4: Serve
  1. Transfer the cooked cabbage mixture to a serving dish. Sprinkle the crushed walnuts on top for added texture and nutty flavor.
