  • 3–4 tablespoons olive oil
  • fine sea salt to taste
For the Tomato Salsa
  • 20 cherry tomatoes large handful, finely diced
  • 1–2 spring onions/scallions or 10 chive sprigs, finely chopped to small rings
  • 1 teaspoon vinegar or fresh lemon juice, or more to taste
  • 2–3 tablespoons olive oil

Method
 

Roast the Cabbage
  1. Preheat your oven to 190°C (380°F). Slice the cabbage into wedges or rounds (about 1/2 inch thick) using a sharp knife. Arrange the slices on a baking tray lined with parchment paper, ensuring they don’t overlap for even cooking.
  2. Brush the cabbage slices generously with olive oil and sprinkle fine sea salt on top. Roast for 25–30 minutes, turning halfway through until golden-brown edges and tender centers appear.
Prepare the Tomato Salsa
  1. Finely dice the cherry tomatoes and chop the spring onions or chives into small rings. Combine them in a bowl with vinegar and olive oil. Stir gently, taste, and adjust with additional vinegar or salt, if desired.
