  • 1 tablespoon balsamic vinegar

  • 1 teaspoon Dijon or German mustard Swap Dijon mustard with German mustard for heavier flavors
  • 0.5 teaspoon sea salt to taste
  • 0.5 teaspoon black pepper to taste

Method
 

Step 1: Preheat the Oven
  1. Preheat the oven to 220°C (430°F) and line a large baking sheet with parchment paper.
Step 2: Prepare the Cabbage
  1. Quarter the cabbage, then remove the white core and discard. Finely chop the cabbage and place it into a mixing bowl.
Step 3: Season the Cabbage
  1. Add the oil, vinegar, honey, mustard, salt, and pepper to the bowl. Use your hands to mix very well, massaging the seasoning into the cabbage until fully coated.
Step 4: Roast the Cabbage
  1. Transfer the cabbage mixture to the prepared baking sheet. Roast for about ten minutes, or until the cabbage is browned in some places and just cooked but still slightly crunchy. Serve immediately.
