Ingredients
  

  • 2 teaspoons extra-virgin olive oil
  • 1 pound mild Italian chicken sausage casings removed
  • 1 yellow onion diced
  • 4 cloves garlic minced
  • 0.5 teaspoon apple cider vinegar
  • 2.5 teaspoons Adobo Seasoning *
  • 0.5 teaspoon kosher salt
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon freshly ground black pepper
  • 1 sprig rosemary
  • 1 pound orange-fleshed sweet potatoes peeled and cubed
  • 6 cups unsalted chicken Bone Broth
  • 0.25 cup Dairy-Free Heavy Cream optional
  • 2 cups lacinato kale or Swiss chard stems and ribs removed, leaves torn loosely packed

Method
 

Stove-Top Cooking
  1. Heat 2 teaspoons of olive oil over medium-high heat in a large skillet.
  2. Add sausage and cook, breaking it up and stirring frequently, for 2–3 minutes until browned.
  3. Stir in diced onion and minced garlic, cooking for 1–2 minutes until onion begins to soften.
  4. Add apple cider vinegar, Adobo seasoning, kosher salt, thyme, black pepper, and rosemary. Stir well.
  5. Combine sweet potatoes, chicken bone broth, and optional dairy-free heavy cream. Bring to a boil, then reduce heat to simmer for 20 minutes.
  6. Stir in kale or Swiss chard, cooking for 5–7 minutes until wilted. Serve hot and enjoy!
Instant Pot Version
  1. Use the sauté function for steps 1–4, then seal and cook on high-pressure for 8 minutes, followed by a natural release.
Slow Cooker Version
  1. After browning sausage, onion, and garlic, transfer to the slow cooker. Add remaining ingredients and cook for 8 hours on low or 4 hours on high.
