Ingredients
  

Main Ingredients
  • 1 lb. whole Brussels sprouts or 1 12-oz. bag of pre-shaved Brussels sprouts
  • 1 red pear julienned
  • 1/2 cup dried apple slices roughly chopped or substitute 1/4 cup golden raisins
  • 1/3 cup shaved Manchego cheese substitute Parmesan or feta
  • 1/4 cup toasted pumpkin seeds
Dressing Ingredients
  • 2 Tbsp. fresh lemon juice
  • 2 tsp. Dijon mustard
  • 1 small garlic clove grated
  • 1/2 tsp. honey
  • 1/4 tsp. sea salt
  • 1/4 tsp. black pepper
  • 1/4 cup extra-virgin olive oil

  • Skillet (for toasting seeds)

Method
 

Prepare the Brussels Sprouts
  1. Shred Brussels sprouts using a mandoline slicer or a knife. Add them to a large bowl and season with 1/4 teaspoon of salt.
Make the Dressing
  1. Whisk together lemon juice, Dijon mustard, grated garlic, honey, sea salt, and black pepper in a bowl. Gradually stream in olive oil while whisking constantly until emulsified and creamy.
Combine Salad Ingredients
  1. Add the julienned pear, dried apple slices, shaved Manchego cheese, and toasted pumpkin seeds to the Brussels sprouts.
Toss to Coat
  1. Pour the prepared dressing over the salad mixture. Toss thoroughly until all ingredients are evenly coated. Taste and adjust seasoning with additional salt and black pepper, if needed.
Garnish and Serve
  1. Optionally, top with extra shredded cheese just before serving.
