Step 1: Prepare the Sweet Potatoes
- Heat the olive oil in a large skillet. Add diced sweet potatoes and season with salt and pepper. Sauté over medium heat for 8 minutes, stirring occasionally. Add 3–4 tablespoons of water to the skillet, cover it with a lid, and let the sweet potatoes steam for about 4 more minutes, or until they are fork-tender.
Step 2: Combine the Ingredients
- Add the green chiles, black beans, cooked brown rice, chili powder, cumin, oregano, smoked paprika, garlic powder, salsa, cilantro, lime juice, and a bit more salt and pepper to the skillet. Stir everything until well combined and heated through.
Step 3: Melt the Cheese
- Sprinkle the shredded cheese evenly over the top. Cover the skillet with a lid and let it cook for another 3–4 minutes, or until the cheese has melted and the dish is thoroughly warm.
Step 4: Serve
- This dish is ready to serve as is, but you can also garnish it with additional cilantro or serve alongside avocado slices.
