  • 1 tablespoon olive oil or avocado oil
  • cups onion diced (about 1 onion)
  • 2 cloves garlic minced
  • 1 cup green bell pepper diced (about 1 bell pepper)
  • 5 cups sweet potatoes peeled and cubed (about 2 large sweet potatoes)
  • 30 oz canned tomato sauce
  • 16 oz canned diced tomatoes
  • 30 oz black beans drained and rinsed
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • ½ teaspoon cayenne pepper
  • ½ teaspoon paprika

Method
 

Step 1: Sauté the Turkey and Onion
  1. Heat the oil in a skillet over medium-high heat. Add the ground turkey and cook, breaking it into crumbles, until browned, about 5-7 minutes. Next, add the diced onion and cook for 3-5 minutes until softened. Stir in minced garlic and cook for another minute.
Step 2: Combine Ingredients in the Slow Cooker
  1. Transfer the cooked turkey, onion, and garlic to the slow cooker. Add the diced green bell pepper, sweet potatoes, canned tomato sauce, diced tomatoes, black beans, and spices (chili powder, cumin, salt, black pepper, cayenne, and paprika). Stir everything together to combine.
Step 3: Slow Cook the Chili
  1. Set your slow cooker to low and cook the chili for 4-6 hours. Stir occasionally to prevent sticking and ensure even cooking. The chili is ready when the sweet potatoes are tender and the flavors are well combined. Taste and adjust seasonings as needed.
