Prepare the Quinoa
- Rinse the quinoa thoroughly in a fine-mesh strainer under cold running water until the water runs clear. This removes any potential bitterness. Drain well.
Cook the Quinoa
- Pour the rinsed quinoa into a medium saucepan along with 2 cups of water. Bring the mixture to a rolling boil over high heat. Once boiling, immediately reduce the heat to low, cover the pot tightly, and let it simmer gently for about 15-20 minutes. You're looking for the quinoa to become tender and absorb all the liquid. Keep a close eye during the last few minutes to ensure it doesn't scorch on the bottom.
Sauté Aromatics
- While the quinoa is cooking, heat 1 tablespoon of olive oil in another saucepan over medium heat. Add the minced onion and sauté for 3-5 minutes until softened and beginning to turn translucent and lightly golden. Add the minced garlic and cook for another 1-2 minutes until fragrant, being careful not to burn it.
Season the Black Beans
- Add the drained and rinsed black beans to the saucepan with the onions and garlic. Stir in 1/2 cup of water, 2 tablespoons of chopped fresh cilantro, the chili powder, and the pinch of cayenne pepper. Bring the bean mixture to a boil, then reduce the heat to medium-low. Let the beans simmer uncovered for about 15 minutes, allowing the liquid to reduce and the flavors to meld. Stir occasionally. Stir in 2 tablespoons of fresh lime juice and season with salt to taste.
Finish the Quinoa
- Once the quinoa is cooked and the liquid is absorbed, remove the saucepan from the heat. Let it sit covered for 5 minutes. Then, uncover and gently fluff the quinoa with a fork. Stir in the remaining 2 tablespoons of chopped cilantro and 2 tablespoons of fresh lime juice. Season with salt to taste. The quinoa should be light, fluffy, and fragrant.
Assemble the Bowls
- Divide the prepared cilantro-lime quinoa evenly among four bowls.
Add Lettuce Base
- Top each portion of quinoa with about 1/4 cup of shredded lettuce.
Layer with Beans
- Spoon the seasoned black bean mixture over the shredded lettuce in each bowl.
Add Your Favorite Toppings
- Get creative! Crown each bowl with your choice of optional toppings like pico de gallo, salsa, diced tomatoes, corn, avocado, cheese, sour cream, or hot sauce. Serve warm and enjoy!
