  • 1 tablespoon olive oil
  • 1/4 cup onion minced
  • 1 clove garlic minced
  • 30 ounces cooked black beans or 2 cans, drained and rinsed
  • 1/4 cup fresh cilantro chopped
  • 1/4 teaspoon chili powder mild
  • 1 pinch cayenne pepper spicy
  • 1/4 cup fresh lime juice
  • 1 cup shredded lettuce
  • to taste Salt
  • optional Grated cheddar or jack cheese
  • optional Sour cream or Greek yogurt
  • optional Pico de gallo or salsa
  • optional Diced seeded tomatoes
  • optional Hot sauce or sriracha
  • optional Sliced avocado
  • optional Guacamole
  • optional Corn

Equipment

  • Medium saucepan
  • Fine mesh strainer

Method

Prepare the Quinoa
  1. Rinse the quinoa thoroughly in a fine-mesh strainer under cold running water until the water runs clear. This removes any potential bitterness. Drain well.
Cook the Quinoa
  1. Pour the rinsed quinoa into a medium saucepan along with 2 cups of water. Bring the mixture to a rolling boil over high heat. Once boiling, immediately reduce the heat to low, cover the pot tightly, and let it simmer gently for about 15-20 minutes. You're looking for the quinoa to become tender and absorb all the liquid. Keep a close eye during the last few minutes to ensure it doesn't scorch on the bottom.
Sauté Aromatics
  1. While the quinoa is cooking, heat 1 tablespoon of olive oil in another saucepan over medium heat. Add the minced onion and sauté for 3-5 minutes until softened and beginning to turn translucent and lightly golden. Add the minced garlic and cook for another 1-2 minutes until fragrant, being careful not to burn it.
Season the Black Beans
  1. Add the drained and rinsed black beans to the saucepan with the onions and garlic. Stir in 1/2 cup of water, 2 tablespoons of chopped fresh cilantro, the chili powder, and the pinch of cayenne pepper. Bring the bean mixture to a boil, then reduce the heat to medium-low. Let the beans simmer uncovered for about 15 minutes, allowing the liquid to reduce and the flavors to meld. Stir occasionally. Stir in 2 tablespoons of fresh lime juice and season with salt to taste.
Finish the Quinoa
  1. Once the quinoa is cooked and the liquid is absorbed, remove the saucepan from the heat. Let it sit covered for 5 minutes. Then, uncover and gently fluff the quinoa with a fork. Stir in the remaining 2 tablespoons of chopped cilantro and 2 tablespoons of fresh lime juice. Season with salt to taste. The quinoa should be light, fluffy, and fragrant.
Assemble the Bowls
  1. Divide the prepared cilantro-lime quinoa evenly among four bowls.
Add Lettuce Base
  1. Top each portion of quinoa with about 1/4 cup of shredded lettuce.
Layer with Beans
  1. Spoon the seasoned black bean mixture over the shredded lettuce in each bowl.
Add Your Favorite Toppings
  1. Get creative! Crown each bowl with your choice of optional toppings like pico de gallo, salsa, diced tomatoes, corn, avocado, cheese, sour cream, or hot sauce. Serve warm and enjoy!
