  • 2 large fillets tilapia
  • 4 roasted red peppers
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • Salt to taste
  • Pepper to taste

Method
 

Prepare the Tilapia
  1. Season the tilapia fillets with salt and pepper on both sides. Heat 1 tablespoon of olive oil in a skillet over medium heat. Sear the fillets for 3–4 minutes on each side until golden and cooked through. Remove from the skillet and set aside.
Make the Roasted Pepper Sauce
  1. In the same skillet, add the remaining tablespoon of olive oil. Sauté the minced garlic until fragrant, about 30 seconds. Blend the roasted red peppers until smooth, then pour them into the skillet. Stir and cook for 2 minutes.
Finish the Sauce
  1. Lower the heat and pour in the heavy cream. Stir gently until the sauce is fully combined and creamy. Taste and adjust seasoning with salt and pepper if needed.
Combine and Serve
  1. Place the cooked tilapia back into the skillet with the sauce. Spoon the sauce over the fillets and let everything warm through for 2–3 minutes. Serve immediately.
