Step 1: Preheat the Oven

Step 6: Prepare the Parsley-Tomato Topping
- Combine diced cherry tomatoes, parsley, red onion, and lemon juice in a bowl. Let sit to marinate.
Step 7: Assemble and Serve
- Smash the roasted sweet potatoes gently with a fork. Top with chickpeas, herb sauce, tomato-parsley topping, and chili garlic sauce if desired. Serve immediately.
