  • 1/3 cup dried cranberries
  • 1/3 cup walnuts chopped

  • 1 batch maple balsamic dressing

Method
 

  1. Preheat your oven to 425°F.
  2. Arrange halved Brussels sprouts, chopped sweet potatoes, and thinly sliced shallot on a baking sheet. Drizzle with avocado oil and toss to coat evenly. Use clean hands for better coating.
  3. Sprinkle with garlic powder, salt, and pepper. Toss again to distribute seasonings.
  4. Transfer to the preheated oven and bake for 25–30 minutes, tossing halfway through. Look for caramelized edges and golden brown colors.
  5. Meanwhile, prepare the maple balsamic dressing by sealing all ingredients in a jar and shaking until emulsified.
  6. Remove roasted veggies from the oven. Sprinkle with dried cranberries, chopped walnuts, and crumbled blue cheese.
  7. Drizzle with prepared dressing right before serving.
